Brownies au tofu


1/4 cup firm tofu, 1/4 cup soymilk, 2T fruit jam, 1T vegetable oil, 1t vanilla, 3/4 cup raw sugar (or brown sugar, if preferred), 1/3 cup unsweetened cocoa powder, 1/2 cup flour, 1/2 tsp baking powder, 1/4 tsp salt, nuts and/or chocolate chips to add, if desired

Puree the tofu and soymilk till smooth; pour mix into bowl. Add the other liquid ingredients, mix, then add the dry ones and mix again. Add whatever additions you might like (add a few slivers of dark chocolate) pour batter (and smooth it around, because it should be quite thick) into an oiled and floured pan and bake at 350F (175C) for 25 min. Tip : Take the brownies out of the oven a little early so they are extra moist--you may prefer yours fully baked.
