Spicy Curry Almonds


2 cups whole almonds (blanched)
2 teaspoons extra-virgin olive oil
2 teaspoons curry
1/2 teaspoon salt (or to taste)
1/4 teaspoon ground pepper

1. Preheat oven to 300 degrees F.
2. Place the almonds in a baking pan and toss with the oil, curry, salt and pepper. 
3. Bake until the almonds are lightly toasted (about 25 minutes). 
4. Let the spicy almonds cool on a wire rack.
